Weekly Sandwich: Ham, Cheddar & Apple Butter

I just liked the sound of it. Ham, cheddar and apple butter. Found it on The Galley Gourmet, an excellent recipe site by a Midwestern mother of three. I figured the sandwich's mix of sweet and savory had to taste pretty darn good. And it does.

What drew my interest most was the apple butter. I'd never tasted it before. I'd heard of it, sure, but only in reference to people who didn't know their asses from it?an endearingly crusty old insult, one my aunt used to say sometimes and one I've always enjoyed, as long as it wasn't being said about me.

I also liked the site's writer, Nicole, and her use of the word "tartine" in the sandwich's name. Tartine means open-faced, which I didn't know and am sure I'll forget because it's a tough word to wedge into conversation often enough to make it stick. But I'll certainly remember The Galley Gourmet's recipe for this surprisingly delicious ham, cheddar and apple butter tartine.

  • 6 ? ?inch thick slices of good country bread *?
  • 2 tablespoons of unsalted butter, softened
  • 1/3 cup apple butter, homemade or store bought
  • 2 tablespoons Dijon mustard
  • 2 tablespoons grainy Dijon mustard **
  • 1 ? ?lbs Black Forest Ham, thinly sliced (I use Boar's Head) ***
  • 12 oz extra sharp white cheddar cheese, sliced
  • 2 tablespoons chopped fresh chives

* other recipes suggest ciabatta

** other recipes include just one type of mustard, which is what I used

Here are The Galley Gourmet's instructions:

Place oven rack to highest position and preheat the broiler. In a small bowl combine the mustards and set aside.

Butter 1 side of each slice of bread with the butter. Place on a baking sheet. Broil until the bread begins to brown, about 2 minutes. Remove from the oven and spread the mustard mixture evenly over the toasted bread. Then spread the apple butter evenly over the mustard. Layer the ham and the top with the cheese slices. Return the baking sheet to the oven and broil until the cheese melts and begins to brown in some spots, about 2 minutes. Remove from the oven and sprinkle with chives. Serve immediately. Enjoy!?
