Salad bars offered at all middle and high schools in Orange this fall ...

The salad bar that will be in Orange secondary schools this fall

Every Orange County public secondary school will have a salad bar this fall.

According to Lora Gilbert, director of food services,??they are a ?make your own? salad with the bowl of greens, shredded cheese, diverse salad toppers such as a combinations of apples, raisins, and crackers, Southwestern topper of the tortilla strips, black beans and corn, and the veggie topper of carrots, sugar snap peas, and tomatoes offered every Tuesday and Thursday.?

At the elementary level, about 30 schools are ready with salad bars and the rest will have them by the end of October, Gilbert said. They will be offered to students Thursdays and Fridays.??Gilbert says elementary students ?can choose from romaine lettuce and other greens, packages of seasonal produce such as cherry tomatoes, green and red peppers, zucchini, broccoli, and cucumbers, then the students have their choice of a seasonal fresh fruit such as pineapple, apples, oranges, grapes, melon, and plums and a multigrain cracker or whole grain breadstick.?

Sounds delicious.

The changes are part of a new law requiring schools to increase offerings of whole-grain rich foods, limit calories and portion size based on the age of children, reduce saturated fats and add fruit and vegetable servings at lunch.

Orange County schools have gone further,?requiring pasta, breads and pizza to be 51 percent whole grains, limiting serving sizes of beverages other than water to 12 ounces, requiring a la carte items to meet nutrition standards, adding more fruit and vegetable options?and adding the salad bars.
